Tomato Soup

With the snow piled up outside and the fireplace crackling, I knew I needed something cozy to warm me up. That’s when I decided to whip up my favorite Tomato Soup, paired with a classic grilled cheese. There’s just something about this simple, comforting dish that makes everything feel a little cozier—especially with a fire going and when there is a looming week of snow on the way.


The soup comes together so easily, and it’s the perfect way to hunker down and enjoy a quiet winter evening. Whether you’re snowed in or just looking for a hearty meal to soothe the soul, this combo never fails to deliver warmth and comfort.

 

 

Ingredients: 

 

4 cups chopped fresh tomatoes (or 32oz crushed tomatoes, I love the San Marzano ones)

1 sliced onion

2 cups chicken broth

2 tablespoons butter

2 tablespoons all-purpose flour

1 teaspoon salt

2 tbsp cream cheese (optional to make it more of a bisque) 

Instructions: 

 

In a saucepan or dutch oven, sauté the chopped tomatoes and onion in a tablespoon of oil until fragrant. Add the chicken stock and let it come to a boil. Turn the heat down and when it’s no longer boiling grab an immersion blender and blend it all together right in the pan until it’s a nice texture…tomato soup texture!

 

Remove from the pan and make a roux, which is butter and flour whisked together and add your tomato soup back in. Add salt to taste.
