6-Ingredient Tuscan Soup

You guys, this 6-ingredient tuscan soup is an absolute dream for busy weeknights, and let me tell you, it’s SO easy! I whipped it up in my dutch oven, but you can totally toss everything into the instant pot and let it do the work for you. It’s one of those simple, no-fuss recipes that feels like you’re getting a hug in a bowl.

I was honestly a little shocked my kids loved it, but they asked for seconds, which is a BIG win in my house. This one-pot meal gets even better on day 2 after it sits in the fridge overnight—it thickens up and the flavors are just chef's kiss! If you like your soup a little more brothy, you can stir in some extra chicken broth (about ½ to 1 cup) and a little tomato sauce (maybe ½ cup) at the end of cooking. I did this after it reduced down a bit, and oh my goodness, it made it even yummier.

This is the kind of recipe you’ll keep coming back to because it’s simple, delicious, and kid-approved. Plus, those leftovers are pure magic. Trust me, you’re going to LOVE how easy and flavorful this Tuscan soup is!

Ingredients:
4 cups of chicken broth
1 28-oz can of diced tomatoes
1 package of cream cheese, cubed
3 handfuls of spinach
1 lb of italian sausage
1 bag of tortellini
You'll want a little freshly ground pepper and freshly grated parmesan;)
Instructions:
Sauté your sausage until cooked.
In your dutch oven or instant pot, add the sausage, cream cheese, diced tomatoes, and chicken broth. If you’re working in a dutch oven, let it all come to a boil and then simmer for an hour or so, until all the cream cheese is dissolved into the sauce.
Add the tortellini and the spinach and cook for an additional five minutes on a low boil. That’s IT!! You’re done and ready to serve. Add some fresh basil if you have it on the top, freshly grated parmesan and freshly ground pepper and enjoy!
