Fall is officially here, and while I love layering my favorite Marea sweaters and cardigans, I also find myself spending more time in the kitchen, looking for comforting, easy-to-make meals. My go-to recipe this season? One-Pot Creamy White Chicken Chili. I’ve tried several versions over the years, but this one from The Skinnyish Dish is truly a winner in my house.
It’s the perfect combination of hearty and healthy, with simple ingredients that make it a breeze to whip up on busy days. Plus, it’s a one-pot recipe—so minimal cleanup, which is always a win!
Why I Love This Recipe
What makes this chili extra special is how it balances flavors and textures. The creaminess of the beans and the richness of the chicken, paired with just the right amount of spice, makes it irresistible. Ingredients:
1-½ lbs chicken breast, raw
2 15.5 ounce Great Northern Beans (about 3 cups) drained, but not rinsed
2 4 ounce cans cans diced mild green chiles
1-½ cups corn kernels (frozen or canned)
1-¾ cups chicken broth low sodium, if available
2 tsp cumin
2 tsp garlic powder
2 tsp onion powder
2 tsp chili powder
1 tsp kosher salt
1 tsp Lawry’s Seasoned Salt
1 tsp pepper
¼ tsp cayenne pepper more or less depending on level of spice preference
1/2 cup half and half
4 oz light cream cheese
Instructions:
Everything goes into the pressure (or slow) cooker and my kitchen smells incredible. Sometimes I’ll prep it in the morning before heading to the office or running errands. By dinner time, I’ve got a delicious meal ready to go.
