Slow Cooker Chili Bar

I’m beyond excited to share the ultimate game-day recipe: Brian’s “Famous Chili” and our family-favorite Slow Cooker Chili Bar! Every time we set this up for a weekend gathering, it’s an absolute hit. It’s the perfect way to serve up warm bowls of chili that everyone can enjoy at their leisure—no need to hover over the stove, just set up the slow cooker, and you’re good to go all day!
 
For an extra kick, add a few sliced jalapeños on top of your cornbread right before baking. Trust me, it’s a game-changer!
 
And if you’re like us—a family of Buffalo Bills fans—this quick and delicious chili is just the thing for Sunday Night Football! Made in just 30 minutes, this recipe will have your friends and neighbors coming back for more week after week.
 
Ingredients:
1 tbsp extra virgin olive oil
1 white onion, chopped
2 green pepper, chopped
2 red pepper, chopped
1 clove minced garlic
2 lbs ground beef
2 tbsp tomato paste
1 tsp ground cumin
1 tsp dried oregano
2 tbsp chili powder
salt
ground black pepper
red pepper flakes
¼ tsp. cayenne pepper
2 (15oz) can red kidney beans
2 (28 oz) can diced tomatoes
1 beer

Toppings:
shredded cheddar cheese
sour cream
scallions
jalapeño pepper
cilantro
avocado
hot sauce
tortilla chips (I like the blue ones)

Instructions:
In a large dutch oven pot over low heat add extra virgin olive oil and sauté your chopped onion for 5 mins, or until translucent.

Add in ground beef and minced garlic and cook until beef is no longer pink. Drain the fat.

Add in spices, kidney beans, diced tomatoes, tomato paste and beer (optional but delicious).

Transfer to your slow cooker and simmer for 15 mins, or all day.

For some more spice just add more chili powder, cumin, pepper flakes or cayenne (be careful!)

You can also swap the meat for chicken or vegetarian - you do you ;)
