Creamy Chicken and Spinach Pasta Bake

Ingredients:

  • 1 box pasta of your choice
  • 12 ounces ricotta cheese
  • 1/2 cup heavy cream or milk (for a lighter option)
  • 1 rotisserie chicken, shredded
  • 1 onion, chopped
  • 2 tablespoons butter (for sautéing)
  • 1 bag fresh spinach
  • 1 bag shredded mozzarella cheese

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Cook Pasta: Cook the pasta to al dente according to package instructions. Drain and set aside.
  3. Sauté Onion: In a skillet, melt the butter over medium heat. Add the chopped onion and sauté until soft and translucent.
  4. Combine Ingredients: In a large casserole dish, mix the cooked pasta, ricotta cheese, heavy cream or milk, sautéed onion, shredded rotisserie chicken, and fresh spinach. Stir until evenly combined.
  5. Top with Cheese: Sprinkle the shredded mozzarella cheese evenly over the top.
  6. Bake: Place the casserole dish in the preheated oven and bake for 20 minutes, or until the cheese is melted and bubbly.
  7. Serve: Remove from the oven and let rest for 5 minutes before serving. Enjoy!
